Feral Dinner at Mestizo
Veganizer pop-up “Feral: When I Seaweed, I Smoke It” was the first of several vegan dining events celebrating sea veggies in partnership with Winter Waters this year.
Chefs Ryan Koger and August Winningham created a stunning vegan & gluten-free meal filled to the brim with the umami of the sea, plus a few spectacular seaweed-centric cocktails courtesy of Nan Chaison of Mestizo. Crowd favorites of the night were the Stuffed Smoked Collard Greens filled with alliums, wild rice, & Sea Lettuce, glazed in apple cider dashi, as well as the Masa Dumplings, made with Dulse-seasoned Three Sisters masa dumplings, glazed with fermented squash broth, served with hazelnuts, apples, alliums, & shaved Kombu misozuka cured tofu.
