Rummer House Dinner
The Rummer House Seafood Dinner by Chef Trever Gilbert was an imaginative menu filled with seaweedy goodness.
Held in the Dame Collective Rummer House, this intimate dinner offered unique and exciting new ways to use regenerative seafare in the fine dining world. Standout dishes included the Oregon Rockfish Ceviche with pickled Dulse, citrus, apple, coconut, shallot & papadum, as well as Tamarind and Kelp Glazed Squash with chili, tamarind & sweet potato.
The Heirloom Roasted Carrots with Thai Dulse curry glaze, shallots & Thai herbs was also a crowd favorite. In addition to a full menu of savory dishes, Chef Gilbert offered a sweet treat in the form of an Arroz Con Coco, with pickled Dulse and raisin, chocolate, coconut & chili.
