RECAP: Oregon Albacore Omakase at Takibi

The Oregon Albacore Omakase at Snowpeak’s NW-Portland Japanese restaurant, Takibi, was an exercise in utilizing albacore in unique ways, including in dessert! Chefs Gille Nakagawa of Takibi and Jeff Kim of Aji Fish Butchery & Zilla Sake teamed up on this special event. This sold-out dinner hosted 70 guests, including Albacore fishermen and board members of the Oregon Albacore Commission. A portion of the proceeds ($418.75) went to benefit a non-profit chosen by Winter Waters, FishHer. Captain Rick Goche led the crowd in a fun, educational round of Albacore trivia and provided canned albacore as prizes.

Welcome: Momokawa sake infused with dried Oregon coast dulse
First Course: Cold smoked yuzu miso albacore with salmon skin chips and dried dulse
Second Course: Albacore mousse on toast with greens and dulse
Third Course: Charred cabbage and dulse seaweed salad, seared albacore, yuzu miso cream, black vinegar & pomegranate seeds
Fourth Course: Albacore takikomi gohan - albacore broth-steamed rice with albacore, shiitake, shiso, myoga, sesame seed, dulse furikake
Fifth Course: Vanilla ice cream with albacore tsume, hazelnut brittle, with dulse dusting
